Eye Pleasing Chocolate Chip Cookies

In honor of February being Age Related Macular Degeneration Month, Debbie Kogler of Magnifiers & More in Mentor, OH has developed her very own good for the eyes signature cookie recipe: Eye Pleasing Chocolate Chip Cookies.

Why are they good for the eyes? These cookies are packed with antioxidant-rich dark chocolate chips, tart dried cherries, red wine and almonds.

Magnifiers & More Eye Pleasing Cookies

Ingredients:

  • 1 cup unsalted butter
  • 1 whole egg
  • 2 egg whites
  • 1 teaspoon vanilla
  • 3/8 cup red wine
  • 2 ½ cups of flour
  • ½ teaspoon of baking soda
  • 2 cups dark chocolate chips
  • 1 cup tart dried cherries
  • 1/2 cup chopped almonds

Instructions:

  • Preheat oven to 375 degrees
  • Combine unsalted butter and sugar with mixer and blend until fluffy.
  • Add egg, egg whites, vanilla, and red wine and blend until smooth.
  • Combine flour and baking soda and slowly add to mixture until just combined.
  • Fold in chocolate bits, cherries and almonds.
  • Spoon rounded teaspoonfuls onto ungreased baking sheet and bake at 375' for 10 - 12 minutes or until edges are firm & brown.
