Roasted Leg of Lamb with Ham
Ingredients:
- 1 bone-in leg of lamb 8-10 lbs.
- 6 loved slivered garlic
- 8 TBS canola oil
- 6 TBS lemon juice (fresh squeezed if possible)
- 2 TBS Oregano
- Salt and pepper to taste
- 6 slices ham, sliced thin.
- 1 cup Ginger ale
- ¼ cup Cognac (if you choose not to use the Cognac you may want to increase the Ginger ale) )
Instructions:

Preheat oven to 275 degrees
- Cut small incisions into room-temperature lamb and insert garlic slivers.
- Heat oil in frying pan and brown lamb on all sides.
- Place lamb on rack in roasting pan.
- Pour lemon juice over top.
- Sprinkle with oregano, salt and pepper
- Lay the ham slices over the top and drench with ginger ale
- Cover pan and cook for 30 minutes
- Increase oven temperature to 350 degrees
- Add cognac
- Bake an additional 45 minutes, basting frequently with pan drippings. Add more cognac or ginger ale as needed.
