Watermelon and Red Onion Salad

Ingredients:

  • 1 red onion, sliced in rings
  • 8 cups of watermelon chunks
  • 2 lbs of mixed salad greens
  • 1/3 cup raspberry puree
  • 1 TBS shallots, finely minced
  • 1/3 cup raspberry vinegar
  • 2 tsp. Honey
  • Salt and pepper to taste

Instructions:

  • Mix the raspberry puree, shallots, vinegar, and honey.
  • Add salt and pepper to taste.
  • Stir in the red onion rings.
  • Make a bed of the greens.
  • Layer the watermelon chunks over the greens.
  • Pour the raspberry vinaigrette over the salad. Serve immediately.
