Stuffed Cherry Tomatoes

Ingredients:

  • 2 pints cherry tomatoes
  • ¼ cup Mayonaisse
  • ½ cup Parmesan cheese
  • 6 scallions chopped including about 1 inch of green on each
  • 1 pound bacon cooked and crumbled.

Instructions:

  • Gently wash tomatoes and remove tops
  • Carefully scoop out seeds and pulp
  • Drain tomatoes on paper towel
  • Mix ingredients with seeds and pulp from tomatoes
  • Stuff each tomato
  • Chill and serve.
