Ancho Chile Beer Cheese Soup

Ingredients:

  • 4 oz. butter or margarine
  • 1 cup chopped celery
  • 2 cups diced red bell pepper
  • 1 qt. 1 cup light cream
  • ½ cup flour
  • ¼ cup Durkee ® Ancho Chile Seasoning
  • 2 cups beer
  • 1 lb. 8 oz. Colby-jack cheese, shredded

Instructions:
  • whisk together cream and flour and add to vegetables
  • Add Durkee ® Ancho Chile Seasoning and beer
  • Cook and stir over medium heat until soup is thickened
  • Add cheese and stir until melted
