Beef Kabobs
Ingredients:
- 2 lbs. Beef, cut into cubes
- 1 (10 oz.) can of beef broth
- 1/3 cup apple juice
- 2 TBS. soy sauce
- 3 cloves crushed garlic
- assorted vegetables cut into cubes or thick slices, including: onions (peeled); cherry tomatoes (left whole); button mushrooms; corn on the cob (about 2 inch pieces); zuchnni; baby carrots
Instructions:
- Heat broth, juice, soy and garlic and bring to a boil.
- Simmer at reduced heat fro 5-10 minutes
- Cool
- Add beef cubes and cut up vegetables and marinate over night.
- Thread onto skewers alternating meat and vegetables.
- Baste while cooking on grill
