BBQ Pork Kabobs

Ingredients:

  • 2 medium zucchini, cut into thick slices
  • 1 large red bell pepper, seeded and cut into squares
  • 2 medium onions peeled and quartered
  • approx. 20 cherry tomatoes
  • 3 strip so fthick bacon cut into squares
  • 1 Tbs. olive oil
  • 2 cloves garlic, crushed
  • Salt and pepper to taste
  • About 2 lbs. Pork tenderloin, cut into cubes

Instructions:

  • In large bowl, combine zucchini, yellow pepper, onion, tomatoes, oil, salt, and pepper. Mix well to coat vegetables.
  • Rub pork with combination of garlic, salt and pepper.
  • Alternate pork and coated vegetables on skewers.
  • Cook on grill until done - approx. 15 minutes.
