BBQ Pork Kabobs
Ingredients:
- 2 medium zucchini, cut into thick slices
- 1 large red bell pepper, seeded and cut into squares
- 2 medium onions peeled and quartered
- approx. 20 cherry tomatoes
- 3 strip so fthick bacon cut into squares
- 1 Tbs. olive oil
- 2 cloves garlic, crushed
- Salt and pepper to taste
- About 2 lbs. Pork tenderloin, cut into cubes
Instructions:
- In large bowl, combine zucchini, yellow pepper, onion, tomatoes, oil, salt, and pepper. Mix well to coat vegetables.
- Rub pork with combination of garlic, salt and pepper.
- Alternate pork and coated vegetables on skewers.
- Cook on grill until done - approx. 15 minutes.
