Seafood Kabobs
Ingredients:
- 1 lb. Large shrimp that have been peeled and deceined
- ½ lb. Bay scallops
- 1 red or orange bell pepper, seeded and cut into squares
- 1 green bell pepper, seeded and cut into peices
- 1 can pineapple chunks
- ½ cup rice vinegar (or other mild vinegar)
- 2 tsp. sesame oil
- 2 tsp. Ground ginger
- 3 TBS. light soy sauce
Instructions:
- Alternate shrimp, scallops, pineapple and peppers on skewers.
- Mix other ingredients together.
- Place kabobs on grill and paste with this mixture.
- Grill no more than 6 minutes, turning and basting as the kabobs cook.
- Remaining sauce can be heated and used as a dipping sauce.
