Seafood Kabobs

Ingredients:

  • 1 lb. Large shrimp that have been peeled and deceined
  • ½ lb. Bay scallops
  • 1 red or orange bell pepper, seeded and cut into squares
  • 1 green bell pepper, seeded and cut into peices
  • 1 can pineapple chunks
  • ½ cup rice vinegar (or other mild vinegar)
  • 2 tsp. sesame oil
  • 2 tsp. Ground ginger
  • 3 TBS. light soy sauce

Instructions:

  • Alternate shrimp, scallops, pineapple and peppers on skewers.
  • Mix other ingredients together.
  • Place kabobs on grill and paste with this mixture.
  • Grill no more than 6 minutes, turning and basting as the kabobs cook.
  • Remaining sauce can be heated and used as a dipping sauce.
