Traditional Cascadilla Soup
Ingredients:
- 1 small peeled and seeded cucumber
- 1 scallion
- 1 small clove peeled garlic
- ¾ tsp. Dill
- 6 raw button mushrooms
- 4 cups unseasoned tomato juice
- 1-cup plain yogurt
- salt and pepper to taste
- croutons and watercress for garnish
Instructions:

Mince cucumber, scallion, garlic, dill and 5 of the mushrooms
- Combine with tomato juice, yogurt, salt and pepper
- Chill
- Serve in chilled bowl with remaining mushroom sliced thinly on top as a garnish along with the croutons and watercress.
