Cold Cucumber Soup
Ingredients:
- 2 large peeled and seeded cucumbers
- 1 ½ cups sour cream
- 1-cup chicken broth
- 1 small onion cut into eighths
- 4-5 sprigs fresh parsley with stems removed
- 1 ½ tsp. Dill
- 1 TBS. Lemon juice (freshly squeezed if possible)
- ¼ tsp. White pepper
- salt only if needed (chicken broth will probably provide enough salt)
Instructions:
- Put all ingredients into blender and puree
- Pour into bowl, cover and refrigerate
- Serve chilled with mint or dill as a garnish.
