Split Pea and Barley Soup
Ingredients:
- 1 lb green split peas
- 1 cup of barley
- 10cups of water
- 2 lbs ham bone with plenty of meat left on it
- 6 cloves of garlic, chopped
- 3 onions, diced
- 2 cups of chopped celery
- 1 cup of carrots, chopped
- 2 tsp oregano
- six medium potatoes, quartered
- salt and pepper to taste

Instructions: Rinse peas and barley (and sort to remove pebbles)
Add to the water, and bring to a boil.
Add remaining ingredients and allow to simmer for many hours, stirring often
If soup gets too thick, add more water and continue to simmer.
